Gluten-Free Chocolate Chip Cookie Recipe
1 1/8 cup light buckwheat flour (see note)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter
3/4 cup brown sugar
1/2 teaspoon vanilla extract (for chocolate mint chip cookies, use 1 teaspoon peppermint extract)
1 large egg
1 cup (6 ounces) gluten-free chocolate chips
1/2 cup chopped nuts (optional)
Turn the oven onto 375 to heat up. Place foil or parchment onto 2 big sheet trays and spray lightly with nonstick spray. Line 2 large baking sheets with parchment paper or lightly oil
In a medium bowl, add all of the dry ingredients and whisk to incorporate. In another bowl. Cream the egg and sugar with a hand mixer until slightly fluffy.
Pour the vanilla extract in and continue beating. Next, add the dry mixture and the chocolate chips. Add nuts if desired.
Drop 2 tablespoons of the dough onto the prepared sheets and bake for 10 minutes. Cool before eating.
For 1 dozen large cookies use a 2 tablespoon (1/8 cup) ice cream scoop or drop heaping tablespoons of dough on prepared baking sheets.
